Molasses & Ginger Cookies



(from The Recipe Deck: Cookies)

Cookie:
1 cup unsalted butter
2/3 cup brown sugar
1 teaspoon ground ginger*
1/2 teaspoon baking soda
1/2 cup molasses
1/3 cup milk
3 1/2 cups all-purpose flour

*Note* Can be substituted with 1 Tablespoon of very finely chopped crystallized/candied ginger

Icing:
3 cups powdered/confectioner's sugar
2-3 Tablespoons milk

  • Cream the butter and sugar together
  • Add the ginger and baking soda
  • Beat in molasses and milk
  • Add flour until fully incorporated
  • Cover and chill approx. 3 hours (or overnight)
  • Roll the dough to desired thickness (<1/4-inch works well) on a floured surface
  • Cut into shapes with cookie cutters
  • Place on a parchment paper-lined baking sheet
  • Bake approx. 7-9 minutes at 375 degrees
  • Cool on baking sheet for 10 minutes before removing to a cooling rack

  • For icing, add milk to the powdered sugar one Tablespoon at a time until it has reached a 'drizzling consistency' 
  • Drizzle over cookies with a spoon or a small bottle
  • Let that sit until you can't stand to wait any longer! :P
