What's for Dinner? (Monday)

Moroccan Grilled Salmon (recipe here)

1/2 cup plain yogurt (I used a 6oz container of greek yogurt)
juice of 1 lemon
1 Tbl. extra-virgin olive oil
2-3 garlic cloves, minced
1 1/2 tsp. ground coriander
1 1/2 tsp. ground cumin
1/4 tsp. kosher salt
4 -6oz. salmon fillets
fresh cilantro or parsley for garnish

  • Combine marinade ingredients (first 7 on list above)
  • Reserve half for sauce/garnish
  • Marinate salmon fillets in remaining sauce for 20-30 minutes
  • While you wait, mix up a Moroccan Side Dish...

Chickpea Salad w/ Cumin Vinaigrette (recipe here)

1 Tbl. red wine vinegar
juice of 1 lemon
2 garlic cloves, minced
1/2 tsp. red pepper flakes
2 tsp. capers, drained and rinsed
1 tsp. paprika
2 tsp. olive oil

1 -15oz. can chickpeas, drained and rinse
1 tomato, chopped
1 roasted red pepper (from a jar), drained & chopped
2 Tbl. fresh thyme (I used 2 tsp. dried)
2 Tbl. fresh parsley (I used 2 tsp. dried)
salt & pepper to taste
1/4-1/2 cup feta cheese, crumbled

  • Preheat grill to medium-high
  • Blot off excess yogurt sauce from salmon fillets with paper towels
  • Grill until browned on both sides, approx 4-6 minutes
  • Serve with chickpea salad, reserved sauce, herbs and lemon wedges
Then kindly ask your significant other to wash up after that huge mess you just made! ENJOY! :D
